Countryside Couscous

Serves: 8
Serving Size: 2/3 cup

Couscous is a staple of North African cuisine and can be found anywhere from Middle Eastern markets to your local supermarket in the pasta or dried beans aisle. Recipe courtesy of National Pork Board.

INGREDIENTS
1 can (14.5 ounce) fat-free vegetable broth
1/4 cup water
1 tablespoon dried minced onion
1 teaspoon ground coriander
1/2 teaspoon sweet paprika
1/4 teaspoon each ground cinnamon and ground red (cayenne) pepper
1/2 cup (2-1/2 ounce package) pine nuts
1/4 cup each dried apricots and cranberries, chopped
1 package (10 ounce) couscous (about 1-2/3 cups)
2 tablespoons fresh parsley leaves, chopped

DIRECTIONS
1. In medium saucepan, bring all ingredients except couscous and parsley to boil over high heat.
2. Stir in couscous; remove from heat.
3. Cover and let stand 5 minutes; stir in parsley.

Shangri-La Hotel Group, & San Miguel Corp donate $1M for typhoon victims

THE FORT, Taguig City, Metro Manila – President Gloria
Macapagal-Arroyo said today that the Shangri-La Hotel Group and San
Miguel Corporation (SMC) are donating $500,000 each to the
government's relief and rehabilitation program to help victims of
Typhoon Frank get back on their feet.

The President announced the good news during the time capsule-laying
here this morning for the 6th Shangri-La Hotel to be built in the country.

The Shangri-La Hotels Group is owned by the Kuok family of Hong Kong,
and the San Miguel Corporation (SMC), Southeast Asia's biggest food
and beverage company.

Aside from its humanitarian gesture, the donation was also a
demonstration of Shangri-La's "faith in the Philippines," the
President said.

Shangri-La and SMC, jointly launched their "Feeding the Future"
program during the same ceremony.

"In the space of the last hour, we've seen two laudable initiatives,"
President Arroyo said in her opening address: "one (the capsule-laying
for Shangri-La at the Fort)… will go a long way to attracting
investors and burnishing our image as a choice tourist destination in
Asia; and another (Feeding the Future), which will have far-reaching
impact towards providing sufficient food for our countrymen," she said.

The President pointed out that "both are important and redound to the
benefit of the Filipino people."

"To the Kuok group, thank you for your faith in the Philippines," the
President said, relating that she had "met Mr. Robert Kuok in two of
my working visits abroad to secure new commitments for job creation
and investments in the Philippines," she said.

"We are happy that our meetings have borne such valuable fruit. We are
encouraged by your investment in our country," the President added.

Pointing out that "at every occasion, I work to help secure additional
support for stabilizing prices and ways to ensure food supplies," the
President thanked the "Kuok and San Miguel groups… for answering the
government's call for private sector involvement in the issue of food
security."

"That the nation's largest food and beverage company and one of the
region's largest food, sugar and vegetable oil companies have convened
to launch this program (Feeding the Future) offers a signal that food
security transcends both the public sector and private institutions –
it demands action for all sectors."

"When government and private sector come together for the public good,
the results can be powerful," she said

The President, who came with First Gentleman Jose Miguel Arroyo, was
received by Kerry Group Ltd. Chairman Robert Kuok, Shangri-la Asia
Ltd. Executive Chairman Ean Kuok, and Ambassador Eduardo Cojuangco,
and Taguig City Mayor Wilfrido Tinga, among others.

Also in the ceremonial ground-breaking and program launching
ceremonies were Senators Edgardo Angara, Loren Legarda, Chiz Escudero,
and Agriculture Secretary Arthur Yap and Trade Secretary Peter Favila.
